From a dream to a food truck revolution

How It All Began

Rico didn't set out to start a food truck, he just couldn't stop chasing the perfect queso.

What started as a simple party dip turned into years of experimenting, tweaking recipes, and feeding friends who kept coming back for more. Over time, one thing became clear: people weren't just eating the queso… they were building their whole plate around it.

In 2025, Rico finally leaned into the obsession and launched Rico's On The Go, a food truck dedicated to doing one thing really well: bold, craveable queso that doesn't play backup to anything. For those with an unhealthy obsession for queso, Rico's is where they go.

The one-man crew behind Rico's On The Go. Rico brings 15+ years of culinary experience and an unhealthy love for cheese. From recipe development to truck operations, he does it all—because when you're obsessed with queso, you don't trust anyone else to get it right.

Every queso recipe, every menu item, every location decision—it all comes from Rico's personal vision of what a food truck should be: authentic, bold, and unapologetically cheese-forward.

The Queso Obsession

"Why so much queso?" people ask. The answer is simple: because queso makes everything better.

Our signature queso recipes took years to perfect. Rico tested over 200 different cheese combinations, temperatures, and flavor profiles before landing on the four varieties we serve today. He even traveled to Oaxaca, Mexico to learn from local queseros (cheesemakers) about the art of melting cheese.

The result? Queso so good that one customer once said, "I'd drink this with a straw if it wouldn't burn my mouth." We took that as a compliment.
